The Chroma pedal is basically a 100K variable resistor between the tip and
sleeve, driven through its full rotation by a rack and pinion. The EV-5, if
you set the Minimum Volume knob CCW and leave the ring disconnected, looks
is a 10K variable resistor between the tip and sleeve, driven through a
fraction of its rotation by a lever and connecting rod. This means you'll
only get a small fraction of the range out of it.

If you had an extra EV-5, you could probably replace the pot with perhaps a
500K one, and get it to work, but you'd have to do some experimenting to
ascertain the optimum value.
